Quite often I read warning about “over-kneading” when using a machine for dough preparation. However, nobody explains how this over-kneading demonstrates itself. What does an over-knead dough look like? Before I do an intentional over-kneading experiment to see what it looks like, perhaps you can explain the issue.

I don’t use a benchtop mixer for dough kneading, so I’m not really sure how an over kneaded dough looks or behaves. Maybe an experiment as you said would show if there’s any difference.
